Workouts and Ice Cream

Great combo right? Well that was the highlight of my Thursday.

Thursdays include my 2 favorite workout classes at the gym. The first is a cardio mix class that includes step, kickboxing and some weights. The second is a standard weight training class. After the 2 solid hours I am spent! The instructor is the most intense woman and I love her classes. It took me awhile to finally get myself to start going to them because of how intense she is, but now after a year of regularly attending I am always wanting more! It really means a lot when she pays me a compliment on my efforts in front of the class. When she sees a person working hard on any level she takes notice which is really motivating!

There comes a point where all of a sudden my body just starts pouring sweat. Gross yes, but so good at the same time.

However, as long as I have been going, these high intensity workouts send my blood sugar for a ride. Before the classes began (and after bfast) I was 175 which is perfect for working out. However afterward was a different story....

Yikes.. But as Ryan says...

It's crazy how every type of workout will have a different affect, but I just gotta deal. Things got better by bar time...

Now onto that ice cream I mentioned.
Dinner was at the Cheesecake Factory again and this time I just couldn't resist one of my favorite desserts. Here are some snap shots from dinner.

Appetizers: spinach and artichoke dip and some lettuce wraps.

Chop salad, yum!

And my favorite....

I very easily could have eaten it all, but mom and I split it. As the saying goes... YOLO ...

The night ended with watching one of my favorites. The Sex and the City movie was on e! which meant I was up til 11, way past my bedtime. (It is actually on again now as I write this, win!).

I love the messages is this movie. If it is meant to be it will be, true love and friendship. I LOVE the scene where Carrie is in those gorgeous dresses for the Vogue shoot.

(Love this shot above!)

No movie is complete without a little drama and some running mascara...

I bet everyone is looking forward to the weekend. I know I am! Race day tomorrow and off to Myrtle Beach on Sunday!

Something To Think About

Hey hey heyyyy. Where is the summer weather? I want to start making use of my backyard!

Anyway as you all know I celebrated national running day by taking the day off. I will make up for it on Saturday at the Kicking 4 Celiac 5k (hopefully the rain will hold off, fingers crossed!).

Yesterday started off on somewhat of a sour note, but it actually turned out to be an enjoyable evening with a last minute trip into NYC.

After stopping at the local pizzeria with my mom while she grabbed a quick lunch I was a tad irked by some of the comments made by a worker. Now don't get me wrong, is it fun to sit in a pizzeria knowing the only thing I could safely have is some lettuce? No, but I would kick myself in the behind if I caved and ate a slice of pizza. I was eyeing the buffalo chicken slice, but it really wasn't a big deal. After being asked if I would like something to which I politely replied no, I have to eat gluten free, the topic of eating gf came up.

The worker then went on to tell me how he/she sampled a slice of gf pizza before and it tasted terrible, "like cardboard." Now I don't know about you, but I have never tried cardboard before nor do I want to.

We conversed about how more and more products are becoming available. From a small business owners perspective I can understand how it may be difficult to offer gf options as a separate area of the kitchen needs to be designated so there is no cross contamination. The funding may not be there and even if it was I would not be making gf pizza part of my routine anyway.

However sometimes it is not what you say, but how you say it. The pizza person  really stressed that he/she would never get involved with that, basically giving off the impression like "tough shirt" (minus the r).  So thank you for thinking that I must eat crap on a regular basis based on the one food item you have ever tried that was gf.

Now I am sure this person meant no offense whatsoever and some may criticize me for being too sensitive. Like I have mentioned in previous posts, dealing with T1D and Celiac have made me a more sensitive and aware person. So it is just something for you all to think about. It is always important to think before speaking especially if you are passing judgement on something you have little knowledge of.

I wonder if he/she would have gotten the message if I said "it doesn't really bother me that I cannot eat pizza, because when I could eat it I always thought yours tasted gross."

I was raised better than that and have a bit more common sense.

I wonder if my aggravation had anything to do with this reading before bar time...

Anywayyyyy

On to the better part of the day which included NYC and eating. I was invited to join my parents as they celebrated the retirement of a coworker of my dads, Robin Hall. Laugh all you want that I hang out with my parents a lot, but hey they are cool!

Robin is officially one of my favorite people in the world. Here is a person that is fair, funny and tells it like it is. He has done a lot for me like making it possible to skate at the Rockefeller Center Xmas Tree Lighting and of course being The Elf driver on the Santa Float in the Macy's Parade.

After a night of great food, people and laughs I would like to wish Robin all the best in his future endeavors!

Enjoy the rest of the day and remember to always think how your words may impact others.

Wishing You a Happy National Running Day!

...As I take the day off from the gym. However yesterday was another accomplished workout with running 4mi straight.

Post run...

I am looking forward to my first 5k on Saturday!! Hopefully all goes smoothly. It is going to be fun to challenge myself and step out of my comfort zone. My goal is to finish! I have been looking at some of these to keep me motivated....

(If only) ❤

(I believe in us, Ryan).

I was going to do a WIAW post today because I had a great dinner at The Cheesecake Factory last night, but I forgot to snap pics! So next time because it was sooo good. I was so proud I said no to my favorite Ice Cream Sundae. #willpower.

Anyway I am still trying to get my post out to Michael G. If any of you readers are are Twitter maybe you can help me get it out there! Could you imagine?!

Have I found The One?!?!

Maybe?! So I don't usually watch the show The Bachelorette, but I am going to have to start because I think my soul mate is mistakingly on that show. Michael G is his name. Not only is he very handsome, but also a T1D!

At 6'2, a lawyer, from Long Island and handsome (I mentioned that right?) I think it's clear we are a perfect match.

It is one thing to have things in common, but finding someone who can really relate to the ups and downs of T1D is a plus. From my own dating experience, it can be a little uncomfortable trying to find the "right time" to mention having T1D, not that there is anything to hide or be ashamed of, but you don't exactly want to start out as "Hi my name is Kim and I have type one diabetes." Most likely the other person will have no idea what is involved unless they have to deal with it themselves. It's all about timing and discussing it in a way that isn't overwhelming and make it appear as if it doesn't phase you (although it very well may).

With Michael G, I would not have to worry about that! Oh I can picture having dates where we would count each others carbs, help each other through the highs and lows and laugh at all of the other ignorant people.

Based on his abc profile, he described his ideal mate as "thin, athletic build and a beautiful smile" ... Sounds familiar right?? .....

His ideal mate's personality is "witty, down to earth, honest, loving, considerate, intelligent, mature but fun."

Again....

Fun...

At 33 he is slightly older than me, but who cares... Ill be 21 soon. I have been told my maturity takes precedent. We both like to be active so we would definitely compliment each other.

Maybe my blog will go viral and he will realize he did not need to go on national tv and that his mate is only a few towns away from him.

What's in my suitcase?

Since I have been doing a lot of traveling this year I thought an appropriate post would shine light on what comes along. Traveling with T1D and Celiac requires planning, but no fears it can be done! I am not going to lie, having to have extra space in my bag for supplies, insulin and gluten free snacks can be annoying, but I know when I get to my destination it will be worth it. Of course I already have issues deciding what to bring as far as clothes and shoes goes so in a way figuring out what to bring for the others areas is a little more straight forward. I know exactly what I need to bring I just have to make sure I do not forget anything! Otherwise I will have a serious Marcia Brady hairbrush forgetting moment on the plane.

Here are a few snapshots from my recent trip to St. Thomas of what came along.

An extra sensor, tests strips, lancets, insulin pen needles and alcohol swabs.

Glucose tablets in case of low blood sugars. I prefer to have juice for a low as I find it works faster, but it is always important to be prepared and have extra.

This is a MUST as I use it to test my blood and the blue pen is my insulin.

Now for snacks, clearly I need to bring enough protein bars along with me otherwise I will start to hyperventilate, seriously. I didn't snap a shot of my Tupperware, but just imagine all of these and then some coming along for the trip...

I remember the first trip after being gluten free we brought a whole suitcase full of food to Aruba. Luckily we realized we overdid it and that is no longer necessary. There are plenty of options and with so much more awareness about it hotels, restaurants and airlines are providing more options.

It is funny, after almost 10 years of having T1D, I think I have been stopped 2x going through security for my needles, insulin, etc. I have been stopped more often for the food I bring. When they need to touch my bars I go a little crazy lol.

It isn't fun to have to bring all of this stuff and it is just a little stressful making sure I have everything, but I would much rather being extra and be prepared! I also always bring these necessities in my carry on... It would not be fun if these were lost!

Happy June

I cannot believe it is already June! Time is flying by. June has always been my favorite month as it is the start of summer and my birthday month (17 days FYI). Yesterday was a great start to my favorite month! It started out with back to back spin classes...

I think I drank about 10 bottles of water then was running to the bathroom about every 45 minutes for the rest of the day lol.

I wanted to work hard to work off all of the vacation food, especially the buffet breakfasts! However, I probably reversed it later on as I went to my first BBQ of the season.

The Corry's, aka my favorite Piccola Bussola customers (Hi Mary Ellen!) extended an invitation to me. It was such a nice time with great food and company!  See for yourself...

That was the best bacon I have ever had!!

Mary Ellen (left) and Margaret (right).

There was so much to choose from. I wish I took more pics of the apps and desserts. You can still go out while being gluten free, trust me I always find plentyyyy to eat. I was so excited the BBQ sauce was gluten free because the ribs were outstanding! I should have gotten a pic beforehand but they went so fast.
I took along a gluten free hamburger bun from home and I was all set.

Mary Ellen had to cut off my water supply since I was driving. ;)

Hope you all had a happy start to June!

I'm Back!

From St. Thomas that is! What a GREAT vacation. Beautiful weather and views, great food and of course even better company. :)

Here are some snap shots from my trip...

The first night I had this great wedge salad followed by a hearty Surf & Turf. I didn't get a pic of the surf & turf because once I saw it, there was no time for pics.

Waking up to this the first morning was beautiful! We had a great view of the harbor from our room.

Cool infinity pool with a swim up bar.

No caption needed for this next one...

Went to the gym 3/5 days! Had to keep up with all of that good food.

Speaking of food, the buffet was AWESOME!!!

Mom and I one night at dinner. Food was great and plentiful, but they were really overwhelmed so the lack of service took away from it overall.

Ride over to the beautiful Magen's Bay.

Panorama of Magen's Bay

Bar time was even better with this view...

Truly a wedding in paradise...

The pools at the resort were fantastic with even better views!

Mom and I on our last night in paradise!

I have to start getting into the swing of blogging again! So here are a few pics until I can get my brain to write complete thoughts again. :)
Enjoy the nice weather I brought back with me everyone!
