About Me

My name is Kim and I am from Long Island, New York. I am 22 years old and love fitness, food and being healthy! However I do enjoy my occasional indulgences. ;) I work out 6 days a week and take part in everything from running, spinning, weight training and yoga. It is amazing to see what you can accomplish when you work hard and put your mind towards something.


I was never "unhealthy" but wanted to see an improvement in my physical appearance. I really have my gluten free lifestyle to thank for that. After being diagnosed with Celiac Disease in December 2008 I thought the rest of my life was going to be stuck inside of my house eating lettuce and brown rice. Coming from a family that enjoys eating out and going to nice restaurants, I thought I would never be able to eat at my favorite places ever again. However after learning about the lifestyle I discovered that there is SO MUCH that I can eat! Eating naturally gluten free has made me so much healthier. Luckily over the years more and more products have become available to make us gluten free people feel more "normal." There are gluten free equivalents of all foods, it just takes a little more planning. Who doesn't want a muffin here and there or a slice of pizza?

Type 1 Diabetes is something that is a huge part of me as I have been living with it for almost 10 years. My active lifestyle is definitely a plus to keep me in good health, but it doesn't come as easy as I would like to. I constantly have to adjust based on my blood sugar and having Type 1 Diabetes is a constant learning process. Learning how food and activity affect you and adjusting the amount of insulin. I can never be spontaneous or participate in something active without proper planning. By writing this blog I hope to educate and possibly connect with others who have similar interests and experiences!
